This is a really good meatloaf recipe that my mom used to make when I was little. I have doctored it up a bit but it is essentially the same. The amounts of everything is really dependent upon what you like. They are not exact.

1 pound ground sirloin
1 small onion, diced
1/4 cup bread crumbs
1/4 cup parmesan cheeese
2 tsp parsley
2 cloves of garlic, pressed or minced
2 tsp Worcestershire sauce
1 egg
Salt and Pepper

Mix everything together in a bowl and form into a loaf shape. You can use a bread pan if you want to but you get less crusty goodness that way. Bake at 350-375 F until the meat is cooked through… I always cut the center of it to see if it is cooked all the way through. It will probably take about 45 minutes to an hour.

While that is cooking, I usually make some mushroom brown gravy to go on top. I sautee some mushrooms in butter, olive oil, garlic, a touch of lemon juice and salt/pepper. Once they are brown and yummy, add a packet of McCormick mushroom gravy mix and a cup of water. This will make a delicious gravy for the meatloaf and the mashed potatoes as well.

I like to serve this with baby red mashed potatoes! I usually do 2lbs of those with a bit of butter, milk and garlic mixed in.
